Peeling is not necessary
A lot of people are paranoid about washing and peeling root veggies vigorously before using them in meals because there’s a lot of dirt on them. You should wash root vegetables well before using them, however, peeling them is not always necessary.
Some experts also believe that the peels of veggies like potatoes and carrots contain a majority of their nutritional value. Therefore if you are cooking something that has to stay over the flame for a long time, like a stew, and you don’t mind the skin on, skip the peeling!
