Do you like burnt food?
While burning in cooking is not desired, it is an absurd idea but some food items really do taste better if they are a little burnt (we aren’t talking about burnt to the extent that it feels like biting coal). A little earthy and smoky flavor elevates the profile of a lot of dishes.
Barbecues, corn, and tortillas are classic examples of how food tastes better when they are slightly burnt! When charred on the grill, these dishes have an extra smokey flavor.
