Healthy (and Delicious!) Grab and Go Breakfast Ideas

Let’s face it: it’s a whole lot easier to pour ourselves a huge cup of coffee and just call it a morning until lunchtime, but most of us probably already know that that’s not a great idea. There are some major benefits to grabbing a little something to eat for breakfast including it kick-starting your metabolism, giving you a little extra boost of energy, and helping you stay focused throughout your work or school day, but it can be hard to manage our time in the morning because mornings are awful (except for you weirdo morning people!) and frankly, sitting on our bed in our towel staring at our wall takes up a huge fraction of our time. We have a solution though: grab and go or make-ahead breakfast options! Okay, we know this is nothing new, but we can offer you our most favorite recipes that are delicious, healthy, easy to prepare, and even easier to gobble up! Let’s take a look.

Make-Ahead Breakfast Bowls

We totally and completely understand only wanting breakfast if it consists of hot, gooey breakfast foods such as scrambled eggs (with cheese) or breakfast potatoes (with cheese) and sauteed peppers, so for those of you that have great taste, we present to you: make-ahead breakfast bowls. The cool thing about these is you can incorporate your favorite breakfast meats, proteins, and veggies to create something all your own. We suggest meal prepping these for the week, then grabbing one on your way out of the door in the morning. We consider it a major win if you have time to toss one in the microwave before you head to work. (Go you!) Get the recipes for the one pictured here

Freezer Breakfast Sandwiches

Who doesn’t love a hot breakfast sandwich with egg, sausage, cheese, and a little bit of sundried tomato? What if we told you that you could meal prep this healthy breakfast sandwich, freeze it, heat it up at home, then enjoy it on your way out the door on your way to work or class? If this sounds like just the thing you need in your life, then we have some great news for you! The best part? You’ll dirty approximately one pan making these and you’ll have a healthy breakfast for the next 12, yes, 12 whole days! (jillszeder.com) Get the recipe here

Granola Fruit Tart

We love parfaits and this is just a different way to prepare and eat them! Unlike our other two breakfast options this is neither hot nor can it be enjoyed as you’re sprinting out of the door or while you’re sitting in traffic, but it is a delicious and easy to prepare breakfast. You can use any flavor of yogurt and fresh or frozen fruit that you like; we recommend making the tart crusts ahead of time, having a tub of your favorite yogurt on hand, and making sure your sliced fruit is easily accessible so you can toss this delicious breakfast together super fast of a morning and get out the door!
